Kashka’s cha-spiced banana bread

Banana bread topped with walnuts and powdered sugar, served with a lemon glaze.

This eggless recipe can easily be made vegan or gluten-free. Replace milk, butter and greek yogurt with dairy-free alternatives as desired. Also works well with gluten free all purpose flour—the applesauce and greek yogurt will prevent it from becoming dry so you get a moist, dense cake no matter what!

Tools

  • whisk

  • 2 large mixing bowls

  • baking pan/bundt pan

  • masher, or fork

Wet ingredients

  • 3 bananas

  • 4oz unsweetened apple sauce

  • 1/3 cup unsalted butter, softened

  • 3 tbsp milk

  • 1/3 cup greek yogurt

  • 1 tsp vanilla extract

Dry ingredients

  • 1 2/3 cup all purpose flour

  • 1/2 cup sugar

  • 1 tsp baking soda

  • 1/4 tsp salt

  • 3/4 tsp ground cinnamon

  • 1/2 tsp ground cardamom

  • 1/4 tsp ground nutmeg

  • 1/4 tsp ground clove

Steps

  1. Preheat oven to 350°F/175°C

  2. Grease baking pan with butter or vegetable oil

  3. Whisk dry ingredients together in large bowl

  4. Mash bananas in second bowl

  5. Whisk wet ingredients into mashed banana

  6. Whisk banana mixture into dry ingredients

  7. Pour batter into greased pan and bake for about 30–40 mins, checking periodically. Test doneness with toothpick method

  8. Enjoy! Pairs well with cha (tea), of course.
